Fajitas

6 servings:

  • 600 g of beef sirloin
  • a little salt
  • a little black pepper
  • 1 tbsp of oil for frying

Slice the beef sirloin. Heat the oil in the smaller part of the Muurikka Cast iron pan and fry the meat at a high temperature so that the surface of the strips becomes brown but the meat does not cook completely dry. Season the fried meat with salt and pepper.

  • 2 large red peppers (300 g)
  • 3 large onions (300 g)
  • 2 cloves of garlic
  • 4 tbsp of tacoma spice
  • 1 tbsp of oil for frying

Chop the peppers and peel and slice the onion into chunky pieces. Peel the garlic cloves. Heat the oil in the larger part of the Muurikka Cast iron pan and fry the pepper and onion mixture in it. Reduce the heat once the pieces have softened and received some color. Crush or grate the garlic cloves, add in and mix. Season the roast with taco seasoning, store-bought or homemade.

  • 1½ bag of green beans ( 300 g in total)
  • a little salt
  • ½ tbsp of oil for frying

If you are using frozen beans, defrost the green beans. Cut the beans in smaller pieces. Heat the oil and fry the beans in the Muurikka Cast iron pan next to the pepper-onion mix and season with salt.   For serving:

  • 6 tortillas (regular or keto)
  • 1 pot of light sour cream (200 g)
  • fresh coriander
  • chopped fresh chili
  • lime wedges

Quickly marinated white cabbage:

  • 250 g of white cabbage
  • 1 tbsp of sesame oil
  • 1 tbsp of white wine vinegar
  • 1 tbsp of sesame seeds
  • 1 tsp of SteviaSweet Crystal
  • 1 tsp of fish sauce
  • ½ tsp of salt

Slice the cabbage. Add the marinade ingredients into a box with a lid and mix. Add the cabbage strips into the box, close the lid and shake the box well. Leave to season for about 15 minutes. Set the table and the fillings so that the diners can fill in their own tortillas. Add in plenty of toppings and top off with a juice from at least one lime wedge.  Recipe: Eeva-Maria Lisko @keveammatkattilat
