Tomato soup
The recipe yields the best results when cooking with the Mari Easy Pressure Cooker .
- 1 kg Finnish tomatoes
- 2 onions
- 3 celery stalks
- 5 cloves of garlic
- 4–5 dl of chicken broth
- 1/2 pot of fresh basil
- rapeseed oil
- salt, pepper
Start by lining the oven tray with baking paper. Slice the tomatoes and place on the oven tray. Season with salt, pepper and a little oil. Bake in the oven at just over 200 degrees for about 30 minutes. Peel the onions and garlic, chop into small pieces with the celery.
Add a drop of oil in the hot saucepan and add the vegetables. Fry slowly until the vegetables get some colour, then and add the chicken broth. Let simmer for a moment and when the tomatoes are roasted, add them in. Turn off the stove, season and add the basil. Blend into a fine purée with a hand blender and check the flavour. You can use anything you like for decoration. For example, by adding a drop of cream you get a nice texture on the surface, while basil adds some colour.
