SMOKE IN A CHARCOAL GRILL

Add extra flavour to your pizza with smoking chunks

Add Smoking Chunks to the yard oven on the embers in a chip container, or make a foil dumpling for the chips.

Put chips on a double aluminium foil and squeeze the foil into a loose wrap so that the mouth is left slightly open. Place the wrap on the embers. When the chunks heat up, smoke is released from the slit of the wrap.

Pizza made with pizza stone (4 servings)

Tomato mozzarella pizza

Crust

  • 3 dl water
  • a pinch of sugar
  • 1 teaspoon dry yeast
  • 6 dl wheat flour
  • 1 tablespoon canola oil
  • 1 teaspoon salt

Filling

  • 1 can pizza sauce/tomato sauce
  • 2 balls of mozzarella (250 g)
  • ½ teaspoon black pepper
  • ½ chopped fresh basil

Soak the yeast and sugar in 42-degree water in a food processor bowl and add the oil.  Start the machine and slowly add 3 dl of flour, let it mix on medium power for 5 minutes.  Turn off the food processor and let the dough rest for 15 minutes.  Add the rest of the flour and salt. Let the processor run for a few more minutes. Leave the boil in a draft-free place and let it leaven for 30 minutes.

Divide the dough into four parts on a floured baking table. Roll the pieces into thin, round dough bases.  Preheat the pizza stone in an oven at 250-300 degrees until hot.  Tear the mozzarella into smaller pieces and allow to drain properly in a colander.

Sprinkle a little wheat flour on the hot pizza stone and transfer one crust onto the stone. Spread 1/4 of the tomato sauce and torn mozzarella pieces on top of the pizza crust. Close the oven door and bake for 6–8 minutes until the crust is ready and has a nice colour. Remove the pizza from the oven. Spice with black pepper and sprinkle chopped basil onto the pizza. Bake the remaining pizzas in the same way.
