Steamed stuffed bell peppers
Quinoa is a gluten-free grain from South America that can be used like rice in a variety of foods. It is a nutritious traditional plant that contains e.g. protein, vitamin B and calcium. If desired, quinoa can be replaced in this recipe with, for example, dark rice or broken barley groats.
- 1.5 dl quinoa
- 4 medium red bell peppers
- 1 jar (200g) sun-dried tomatoes
- 2 spring onion stems
- 400g minced meat
- 2 dl grated cheese
- 1 tsp oregano
- 1 tbsp whole grain mustard
Boil the quinoa according to the instructions on the package. Chop sun-dried tomatoes and spring onions. Combine with minced meat and quinoa. Add grated cheese, oregano and whole grain mustard and stir. Cut off the top of the bell peppers as a 1 cm thick slice and remove the seeds from the inside. Fill the bell peppers with the minced meat filling and press the top back into place. Put the peppers in a steamerpot and steam for 20 minutes.
