Summery Charlotte

This beautiful cake is quickly made and is the perfect dessert in the event of surprise guests. The cake can be made at the summer cottage, for example, as it does not require an oven.

  • 2 packs of lady finger biscuits

Filling:

  • 1 l milk
  • 8 tbsp sugar
  • 2 tbsp vanilla sugar
  • 2.5 dl cornstarch
  • 2 egg yolks
  • 100 g butter

On top:

  • 500 g strawberries
  • 1 dl gelling sugar
  • 1.5 dl water
  • 3 dl cream

Place the biscuits around and on the bottom of the loose bottom cake tin.

Mix the cream ingredients evenly in the cooker part of the simmerpot and place the cooker part on top of the pot with water. Once the mixture starts to boil, reduce the heat and cook slowly, stirring constantly, to give the cream a smooth and thick composition. Add the hot cream on top of the biscuits, smooth out and allow to cool so that a skin forms on top.

Add fresh strawberries on top.

Boil gelling sugar and water into a glaze and pour over the strawberries. If you are using fresh strawberries, there is no need for the glaze.

Decorate the cake with cream.
