Smoked vendace and lemon vinaigrette

The recipe yields the best results when cooking with the Muurikka Electric Smoking Oven PRO.

• 1 kg of vendaces
• salt
• A couple of sugar cubes

Gut the vendaces and rinse with cold water. Salt the vendaces and let them season. Add the sugar cubes on top. Smoke on level 3 (approx. 200 °C) for about 15 minutes or until the vendaces are beautifully browned.


• 1 dl oil
• 1/3 dl white wine vinegar
• 3 tbsp sugar
• 1 lemon
• fresh dill

Mix the oil, white wine vinegar and sugar together. Squeeze in the lemon juice and add chopped dill. Mix well. Pour the vinaigrette over the smoked vendaces and let marinade in the refrigerator for an hour. Can also be served immediately.
