Pilaf rice

(4 servings) 25 minutes

  • 2.5 dl rice
  • 5 dl water
  • 10 dried apricots
  • 1 tsp salt
  • 1 tsp turmeric
  • 8 whole cloves
  • 1 tsp cumin
  • 1 tsp cinnamon powder 1 tbsp butter
  • 100 g frozen peas, thawed
  • ½ dl walnuts
  • a handful of pistachios

Cut the apricots into four pieces. Measure all ingredients except butter, peas and nuts into a simmerpot and mix gently. Let simmer for 20 minutes or until the water is absorbed into the rice.

When the rice is ready, mix the butter and peas with the rice and put your pilaf rice in a serving dish. Finish by crushing nuts on the surface of the pilaf rice.
